Ingredients

  • 1 can 15 oz / 425 g black beans, drained and rinsed
  • 1/2 cup 120 g salsa
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 8 small corn tortillas
  • 1 cup 115 g shredded cheddar or Mexican-blend cheese
  • 1 tbsp neutral oil
  • Shredded lettuce lime wedges, and extra salsa, for serving

Method

  1. Mash half of the beans in a bowl. Stir in the remaining beans, salsa, cumin, and smoked paprika.
  2. Warm the tortillas briefly so they bend without cracking. Divide the bean mixture and cheese among them, then fold in half.
  3. Heat a thin layer of oil in a large skillet over medium heat. Cook the tacos in batches for 2 to 3 minutes per side, until crisp and the cheese melts.
  4. Drain briefly on a rack or paper towel. Serve hot with lettuce, lime, and salsa.
