Why you will like this recipe

  • Brown or green lentils keep their shape in the broth rather than turning it into a purée.
  • Onion, carrots and celery are softened before the tomatoes, lentils and herbs join the pot.
  • Spinach and lemon juice finish the soup after the lentils have become tender.

Substitutions

Use kale instead of spinach and add it during the final 8 minutes. Green lentils hold their shape better than red lentils, which are not a direct substitute here.

Ingredient choices and cooking cues

Brown or green lentils are the right choice when the soup should retain distinct lentil shapes. Red lentils break down more readily and would produce a different texture. Check the dried lentils for stray debris and rinse them before cooking. Their tenderness is the useful endpoint: they should yield easily when bitten without a dry, chalky centre.

Onion, carrot and celery provide a layered vegetable base. Keep their pieces reasonably consistent so one spoonful does not contain hard carrot alongside collapsed onion. Tomato adds acidity and small pieces of fruit to the broth, while thyme and bay create a background herbal flavour. The bay leaf should be removed as directed; its firm texture is unpleasant to encounter in a bowl.

A gentle, partly covered simmer lets the lentils soften without excessive evaporation. Check the bottom of the pot as the soup becomes fuller, because lentils can settle below the vegetables. The spinach brings a fresh green contrast near the end. Lemon juice sharpens the finished flavour and helps the earthy lentils taste more lively, so assess salt after that final addition rather than before it.

Storage and reheating

Refrigerate for up to 4 days or freeze for up to 3 months. Reheat to a simmer and loosen with broth if needed.

Frequently asked questions

Do lentils need soaking?

No. Rinse and check them for debris before adding them to the pot.

Can I freeze it?

Yes. Cool completely and freeze in meal-size containers for up to 3 months.

Why are my lentils taking longer to soften?

Lentil age and storage conditions affect cooking, and tomato acidity can also slow softening. Test several lentils rather than one. If they remain firm, continue at a gentle simmer with enough broth or water to keep them submerged and prevent the bottom from catching.

Why has the leftover soup become very thick?

Lentils keep absorbing liquid as the soup stands. Stir in a little broth or water while reheating until it returns to a comfortable soup consistency. Taste after loosening it, since the added liquid changes the balance of salt, herbs and lemon.
