Ingredients

  • 454 g boneless chicken breast, diced
  • 1 1/2 US cups (240 ml each) dry brown rice
  • 2 US cups broccoli florets
  • 1 US cup pineapple chunks, drained
  • 1 tbsp (15 ml) olive oil
  • 2 tbsp (30 ml) reduced-salt soy sauce
  • 1 tsp grated fresh ginger
  • 2 tbsp (30 ml) honey
  • 1/2 tsp fine salt, or less to taste
  • 1/4 tsp black pepper
  • Water for rice and steaming broccoli

Method

  1. Start the dry brown rice first, using the water quantity and cooking time on the package, typically 30–40 minutes. Mix soy sauce, ginger and honey in a bowl.
  2. Heat oil over medium-high heat. Fry chicken 6–8 minutes, turning, until browned. Add broccoli and 60 ml water; cover and cook 4–5 minutes until broccoli is tender.
  3. Add pineapple and the soy mixture. Simmer uncovered 2–3 minutes until lightly glazed and the chicken reaches 74°C (165°F). Season with pepper and only as much salt as needed.
  4. Divide the cooked rice among four bowls and top with chicken, broccoli, pineapple and sauce. Serve immediately.

Frequently asked questions

Can pineapple juice replace the pineapple chunks?

The chunks provide both sweetness and distinct pieces of fruit. Juice would add liquid without that texture and would change how the soy-honey coating behaves. Use the stated drained fruit rather than treating its packing juice as an equivalent ingredient.

Why is the glaze still quite loose?

This recipe has no starch thickener. Some moisture comes from the chicken, broccoli and fruit, and the final uncovered stage leaves a light coating. It is not intended to become a dense, sticky sauce like some bottled products.

Which ingredient details matter for this recipe?

Soy sauce, honey and ginger make a light glaze rather than a thick bottled teriyaki sauce. Soy supplies salt and savouriness, honey rounds the flavour, and ginger keeps the sweet pineapple from dominating. Drain the fruit before adding it so its packing liquid does not become an unmeasured part of the glaze.

Brown rice sets the overall cooking pace and remains separate from the skillet. The broccoli receives a brief covered stage with measured water, allowing its stems to soften before the fruit and glaze join the pan. Use similarly sized florets so fine tips do not soften far ahead of thick stalk pieces. Fold the final components together without crushing the pineapple.

How should I store leftovers from this dish?

Cool cooked rice rapidly in shallow containers and refrigerate ideally within 1 hour at 40°F / 4°C or below. Use rice, or any leftovers mixed with rice, within 24 hours of the original rice cooking. Other cooked components kept separate may be refrigerated for up to 4 days after prompt cooling. Reheat rice only once until steaming hot throughout, at least 165°F / 74°C. Keep fresh toppings separate.

When should I start the brown rice for these chicken bowls?

Start it first and follow its package water quantity and cooking time. The rice cooks separately while you prepare the chicken and pineapple.
